Peruvian–Indian Fusion Menu
A vibrant celebration of two rich culinary cultures, bringing together the bold chillies, herbs, and slow-cooked comfort of Peru with the warmth, spice, and aromatic depth of Indian cooking.
Starter - Ají de Gallina Tequeños
Crisp, golden pastry filled with tender shredded chicken in a creamy ají amarillo sauce, blended with cheese and pecans for richness and texture. Inspired by Peru’s beloved Ají de Gallina, this starter also nods to Indian street-food favourites such as samosas and spiced savoury pastries. Served with a smooth homemade ají amarillo dipping sauce, offering gentle heat, colour, and a bright chilli finish.
Main Course - Seco de Cordero Peruano
A deeply comforting Peruvian lamb dish, slow-braised until beautifully tender in a fragrant sauce of fresh coriander, ají amarillo, garlic, cumin, and beer. The result is rich and warming, with the same generous, slow-cooked appeal as an Indian lamb curry, but with Peru’s distinctive freshness from coriander and yellow chilli. The cumin and garlic create a familiar Indian-style spice base, while the ají amarillo brings a uniquely Peruvian warmth and golden colour.
Served with Peruvian arroz a la jardinera, also known as yellow rice: a colourful rice dish cooked with carrots, peas, sweetcorn, green beans, peppers, garlic, cumin, and ají amarillo. For this fusion menu, bay leaves and cloves have been added to echo the aromatic spices often found in Indian pilau and biryani-style rice. Together, the rice and lamb create a generous main course that feels both Peruvian in character and warmly connected to Indian flavours.
Dessert
Suspiro a la Limeña — “Sigh of a Lady from Lima”
One of Peru’s most treasured desserts, served in individual glasses with a silky layer of manjar blanco, Peru’s rich milk caramel, topped with a light port wine meringue.
